Celebrate January with this delicious curried celeriac Waldorf salad

As I write this it is raining outside. Not just a drizzle, but an 'is that a hundred goats dancing on the roof' downpour. January typically arrives with a blast of shocking weather and a reminder that we are in fact entering winter. And yet, after the excesses of Christmas, many of us are looking to switch up our diets with more paired back recipes. Nothing, however, could be more miserable in cold wet weather, than a cold floppy salad!


Our take on the classic Waldorf salad not only gives you an opportunity to use up any leftover Christmas walnuts, cheeseboard grapes and chutneys, but to liven up your tastebuds with refreshing curried spices and the zing of lemon and apple. You will enjoy your lunch break tucking into this warming salad while the rain rampages outside.


It's a cinch to make as well with just some chopping and dicing, and a good swift mix in the bowl. Let us know what you think in the comments!


But of course food isn't the only thing to look forward to in January. Despite the rain, we love January and think it's a hopeful time of year. The lull after the buzz of Christmas, it could be easy to feel a little blue, but that quietness gives space for reflection and planning. Probably why we all start talking about New Years resolutions!
