Some recipes earn a permanent spot in the kitchen. This is one of them.


Pineapple Chilli Jam made its Devon Cookery School debut in our Festive Foodie Gifts Christmas class last year — and it was supposed to be a one-off. A crowd-pleasing edible gift, nicely jarred, done and dusted. Except nobody could stop eating it.


Sweet pineapple, fiery Thai chillis, warm ginger, a splash of vinegar — it's bold, it's balanced, and it goes on absolutely everything. We mean that literally. Cheese boards, cold cuts, leftover turkey sandwiches, straight off the spoon at midnight. There are no rules.


Two jars per batch, a year's shelf life (in theory), and the kind of flavour that makes people ask where you bought it. The answer, of course, is that you didn't. You MADE it, and here's the recipe...
