About This Class

Good steak at home comes down to three things: the right cut, a hot pan and knowing when to stop. This class covers all of them. Our chef will start by demonstrating three cuts side by side: fillet, sirloin and skirt. You'll see how each one behaves in the pan and why they need different treatment. Alongside the steaks you'll see three classic partners made: Café de Paris butter, a peppercorn sauce and a fresh, sharp chimichurri. Then it's your turn. You'll cook a sirloin to exactly how you like it, make your own Café de Paris butter and build a peppercorn sauce in the same pan. By the end you'll understand heat, timing and resting well enough to cook steak with confidence at home. Dietary Info: Not suitable for vegetarian or vegan diets. Can be adapted for gluten-free diets. What You Will Be Making: • Sirloin Steak, cooked to your liking • Café de Paris Butter • Peppercorn Sauce Demonstrated by our chef: • Fillet, Sirloin and Skirt Steak • Chimichurri Skills: • Choosing the right cut for the job • Getting a good crust with the right pan heat • Judging doneness by touch and temperature • Resting and slicing steak properly • Making a flavoured butter • Building a pan sauce What You Will Take Home: Steak is best eaten fresh from the pan, so we'd recommend enjoying it in class. If you'd rather, you can take your steak home to cook later, along with your Café de Paris butter and peppercorn sauce. What You'll Get to Eat: Your sirloin with Café de Paris butter and peppercorn sauce, eaten fresh from the pan in class, or taken home. Portions: Each dish is a generous portion for one. You're welcome to sit down and eat with us at the end of class or take it home to enjoy later. Please bring your own tubs or containers for anything you'd like to take home, as we're cutting back on single-use packaging.
