Get hands-on with the bold, savoury flavours of Southeast Asia in this flavour-packed cooking class. We’ll begin with a demo of a traditional aromatic spice paste—full of lemongrass, garlic, turmeric, and more—showing how this versatile base adds depth to any dish. Then it’s your turn: roast aubergine until tender and charred, and make your own tomato and chilli sambal to spoon over the top—bright, spicy, and addictive. Finish by cooking up the ultimate chicken nasi goreng—fragrant fried rice with umami-rich sauces, crispy shallots, and the perfect fried egg. You’ll leave inspired and ready to recreate these dishes at home. Skills: • Learning about the traditional spice paste, Basa Gede, and how to prepeare it. • Making and balancing a tomato and chilli sambal • Roasting vegetables for maximum flavour • Cooking chicken nasi goreng with authentic technique • Building layers of spice and umami in savoury dishes What you will be making: • Tomato and Chilli Sambal • Sambal Roasted Aubergine • Chicken Nasi Goreng What You Will Take Home: Any additional portions of food prepared during the class will be taken home. We are actively trying to cut back on single-use containers, so please bring your own for any leftovers. What You’ll Get for Lunch: Once your dishes are complete, you’ll sit down and enjoy them, or you can take it all away to share it at home!
