About This Class

Persian cuisine is all about balance—sweet and sour, soft and crunchy, hot and cold—all coming together to create incredible depth of flavour. With its aromatic spices and vibrant ingredients, Persian food has something for everyone! In this flavour-packed class, you’ll learn how to prepare a selection of classic Persian dishes, from juicy, spice-infused Kabob Koobideh to the golden, crispy-bottomed Yoghurt and Saffron Tahdig. You’ll also make a zingy, fresh Lebanese-style slaw and a cooling cucumber and yoghurt dip to complement your meal. By the end of the session, you’ll have the confidence and skills to bring the rich, fragrant flavours of Persia into your own kitchen. Dietary Info: This class can be adapted for gluten-free diets only. Not suitable for vegetarian or vegan diets. What You Will Be Making: • Kabob Koobideh – Grilled minced lamb kabob, packed with Persian spices • Yoghurt and Saffron Tahdig – Steamed Persian rice with a crisp, golden crust • Cacik – A cooling yoghurt dip with cucumber, garlic, and dill • Lebanese Slaw – A fresh, crunchy slaw with no mayo in sight! Skills: • Knife skills for preparing fresh herbs and vegetables • Pan-frying techniques to get the most flavour from your meat • Seasoning for authentic Persian flavours • Cooking Tahdig to achieve the perfect crispy-bottomed rice • Understanding Persian herbs and spices • Plenty of cheffy tips and tricks to elevate your cooking What You Will Take Home: Everything you prepare will either be eaten during the class or taken home. We are actively trying to cut back on single-use containers, so please bring your own for any leftovers. What You’ll Get for Lunch: Once your dishes are ready, you’ll sit down and enjoy a feast of Persian flavours, freshly made by you!
