About This Class

You’ll start by learning the fundamentals of fermentation, creating your own batch of kimchi from scratch with napa cabbage, Korean chilli, garlic and ginger. We’ll talk through flavour balance, fermentation time, and how to adapt the recipe to your own taste. Next, make a classic Korean comfort dish—kimchi fried rice using our in house fermented kimchi. Packed with spice, umami, and topped with a golden fried egg, it’s the perfect introduction to Korean home cooking. You’ll leave with your own jar of kimchi to ferment at home and the skills to keep making it again and again.
