Turn up the heat and bring the vibrant flavours of Jamaica into your kitchen in this lively, hands-on Caribbean cookery class. You’ll begin by creating an authentic jerk marinade from scratch — blending warming allspice, thyme, chilli, garlic, ginger and citrus into a bold, aromatic paste. Learn how to balance heat, sweetness and spice as you marinate your chicken, then cook it to tender perfection with that signature smoky char and irresistible glaze. For vegetarian guests, we’ll use jackfruit as a delicious alternative protein. Its naturally fibrous texture absorbs the jerk marinade beautifully, delivering all the bold flavour and satisfying bite of the classic dish. Alongside your jerk main, you’ll prepare a crisp, refreshing island-style slaw. With finely sliced vegetables and a bright, zesty dressing, it delivers the perfect crunch and contrast to the richness of the spice. You’ll also make traditional Jamaican festivals — lightly sweet fried dumplings that are golden and crisp on the outside, soft and fluffy within. These are the ultimate accompaniment for scooping, dipping and savouring every last bite. While you cook, the chef will demonstrate two classic staples to complete the feast: creamy coconut rice & peas, simmered gently with thyme and kidney beans, and rich jerk gravy — deeply savoury, spiced and perfect for drizzling generously over your plate. At the end of the class, you’ll sit down to enjoy your vibrant Caribbean spread together — bold, comforting and packed with sunshine flavour.
