Get hands-on with the delicate, savoury flavours of Chinese dim sum in this hands-on dumpling masterclass. We’ll kick things off by making your own dumpling wrappers from scratch—a simple dough that transforms into silky, tender gyoza skins. You’ll then create a classic pork and chive filling, learning the folding and pleating techniques that give gyoza their signature look before pan-frying them to golden perfection. Next, we’ll take on a dim sum favourite: prawn cheung fun. Using rice paper as a clever shortcut to mimic the texture of traditional rice noodle rolls, you’ll wrap juicy prawns and steam them to achieve that delicate, slippery finish, served with a light sweet soy dressing. By the end of the class, you’ll have mastered two restaurant-style dishes that are sure to impress at home. Skills: • Making fresh dumpling dough and rolling wrappers by hand • Mastering folding and pleating techniques for gyoza • Balancing flavours in a classic pork and chive filling • Using rice paper as a quick alternative to traditional cheung fun sheets • Steaming and finishing dim sum-style dishes What You Will Be Making: • Pork & Chive Gyoza with homemade dumpling wrappers • Prawn Cheung Fun (rice paper shortcut method) What You Will Take Home: Any additional portions of food prepared during the class will be yours to take away.
