About This Class

This one-day Japanese cookery course explores the flavours and skills to make authentic Japanese food at home. In japan it is customary to express thanks for the meal by saying "gochiso sama deshita," which literally means "it was quite a feast." and we hope that at the end of this course you will feel the same! This lesson can be adapted for vegetarian and vegan diet. Please state if you are either of these when booking. Pork Gyoza (Pork Dumplings): Stuffed with juicy pork and cabbage lightly seasoned with garlic, spring onions, ginger, white pepper and salt. The key to cooking them is a three-stage crisp-steam-crisp process. Chicken Katsu Curry: Seriously crispy chicken served with sticky rice and a Japanese curry sauce. A classic amongst many Japanese restaurants. Did you know that Katsu, actually refers to the breaded and fried accompaniment to the curry itself. Quick and easy Pickled veg (Tsukemono): Japanese pickles—known collectively as tsukemono—can easily go unnoticed as part of a Japanese meal. They cleanse the palate and provide piquancy to counter the heaviness of umami-rich foods. Goma Dare: Goma-dare translates as “Sesame Seed Dipping Sauce”, and is a versatile sauce made from toasted sesame seeds. It’s a gorgeous sauce alongside vegetables and makes a great dipping sauce for the Tempura Vegetable Tempura Vegetables: A selection of veg in a deliciously seasoned crispy tempura batter. You will be making: • Pork Gyoza • Chicken Katsu Curry ( this will be your lunch) • Pickled Vegetables • Gomadare Dipping Sauce Techniques learnt: • Japanese Flavourings • Seasoning • Knife Skills • Rice cooking • Shallow Frying • Deep Frying • Steaming You will take home: • Pork Gyoza • Dipping sauce Everything that you prepare will be either eaten for lunch or will be taken home. You will have leftover Curry sauce, Pickles, Dipping sauce and Gyoza's to take home with you so please bring takeaway containers to pack them away.
