About This Class

Focusing on how to easily fillet both a round fish and a flat fish, you will learn to use the correct knife with confidence to undertake kitchen tasks that will no longer seem daunting. Following a detailed demonstration, the rest of the class is hands-on as you practice your skills. Once you have filleted the fish you will learn how to cook the fillets to perfection, how to make a stock with the bones and how to create many accompaniments and sauces to match your fish. What you will make: • Steamed Sea Bass with Asian dressing • Pan fried Sea Bass, pernod butter sauce, spinach & sautéed new potatoes (This will be your lunch) • Home-made mayonnaise and goujons. • Fish Stock Techniques Learnt: • How to fillet a flat fish and round fish • Fish stock • Homemade mayonnaise • Paneed Goujons (fish in breadcrumbs) • Butter Sauce • Steaming and Pan frying fish Everything that you prepare will be either eaten for lunch or will be taken home, so we recommend that you bring a cool bag if you are travelling far. We will provide eco friendly takeaway containers for you to pack your items into should you have anything to take home. You will only be able to book one space.

Cancellation Policy

You may request to cancel your booking for a full refund up to 72 hours before the date and time of the class. Cancellations between 25-72 hours before the class may be rescheduled to a different date/time of the same class. Cancellation requests made within 24 hours of the class date/time may not receive a refund nor a transfer. When you register for a class, you agree to these terms.
